Climate

Historical data and soil

Vinification

After careful selection of the clusters, the grapes are promptly brought to the winery. Fermentation takes place in temperature-controlled steel tanks and each variety is vinified as a single varietal. Maceration lasts 15-20 days and allows a soft extraction of the most elegant and velvety tannins. At the end of alcoholic fermentation, after careful chemical and organoleptic analysis, the best masses are racked into barrels and barriques where they age and undergo malolactic fermentation. The Sangiovese rests in 50 hl Slavonian oak barrels, while the Cabernet Franc and Cabernet Sauvignon in barriques, partly new and partly second-passage, for 24 months. After repeated tastings of the wines from the barriques and barrels, the best ones are selected for the Grumarello blend. Subsequently, the wine rests for a minimum period of 6 months in bottle.
